Ingredients
  

Steak & Veggies
  • 400 g sirloin steak or ribeye trimmed
  • 2 medium zucchinis sliced lengthwise
  • 1 tbsp olive oil
  • salt and black pepper to taste
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/4 cup fresh parsley chopped
Garlic Yogurt Sauce
  • 1 cup plain Greek yogurt
  • 2 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin optional
  • salt and pepper to taste

Method
 

  1. Preheat grill or grill pan over medium-high heat.
  2. Brush steak with olive oil and season with salt, pepper, smoked paprika, and garlic powder.
  3. Brush zucchini with olive oil and season lightly.
  4. Grill steak 4–5 minutes per side until desired doneness.
  5. Grill zucchini 2–3 minutes per side until charred.
  6. Prepare garlic yogurt sauce by mixing Greek yogurt, garlic, lemon juice, olive oil, cumin, salt, and pepper.
  7. Slice steak thinly against the grain.
  8. Assemble bowls with base, zucchini, steak, and drizzle with garlic yogurt sauce.
  9. Garnish with parsley and serve immediately.

Notes

For extra flavor, serve with roasted cherry tomatoes or avocado slices.
