Method
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- Cream butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in egg, vanilla extract, and pumpkin puree.
- Mix dry ingredients separately, then combine with wet ingredients to form dough.
- Scoop 2 tablespoons dough, place chocolate in center, wrap dough to enclose chocolate.
- Roll dough into balls, flatten slightly, bake 12–14 minutes.
- Cool 5–10 minutes. Decorate with jack-o’-lantern faces using chocolate or icing.
- Serve warm or store in airtight container.
Notes
Use unsweetened pumpkin puree for balance. Add more chocolate for extra gooeyness.
