Ingredients
  

Cookie Dough
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 cup pumpkin puree unsweetened
  • 2.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp pumpkin spice
Filling & Decoration
  • 12 milk chocolate squares or chips for stuffing
  • black or dark chocolate icing for faces
  • orange icing optional decoration

Equipment

  • Mixing bowls
  • Baking sheet
  • Parchment paper
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. Cream butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in egg, vanilla extract, and pumpkin puree.
  4. Mix dry ingredients separately, then combine with wet ingredients to form dough.
  5. Scoop 2 tablespoons dough, place chocolate in center, wrap dough to enclose chocolate.
  6. Roll dough into balls, flatten slightly, bake 12–14 minutes.
  7. Cool 5–10 minutes. Decorate with jack-o’-lantern faces using chocolate or icing.
  8. Serve warm or store in airtight container.

Notes

Use unsweetened pumpkin puree for balance. Add more chocolate for extra gooeyness.
