Ingredients
  

Chicken Rolls
  • 4 boneless, skinless chicken breasts
  • salt and pepper to taste
  • 1 tbsp olive oil
Herbed Ricotta Filling
  • 1 cup ricotta cheese
  • 2 tbsp fresh parsley chopped
  • 2 tbsp fresh basil chopped
  • 1 clove garlic minced
  • 1 tsp lemon zest
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Butterfly chicken breasts to flatten and season with salt and pepper.
  3. Mix ricotta, parsley, basil, garlic, lemon zest, salt, and pepper in a medium bowl.
  4. Spread filling on chicken breasts, roll tightly, and secure with toothpicks.
  5. Heat olive oil in skillet over medium-high heat. Sear chicken rolls until golden on all sides, 2–3 minutes per side.
  6. Transfer rolls to baking sheet and bake 20–25 minutes until internal temperature reaches 165°F (74°C).
  7. Remove toothpicks, drizzle with olive oil, garnish with parsley, and serve warm.

Notes

Chicken can be prepped ahead and stored in the refrigerator until ready to sear and bake.
