Method
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Butterfly chicken breasts to flatten and season with salt and pepper.
- Mix ricotta, parsley, basil, garlic, lemon zest, salt, and pepper in a medium bowl.
- Spread filling on chicken breasts, roll tightly, and secure with toothpicks.
- Heat olive oil in skillet over medium-high heat. Sear chicken rolls until golden on all sides, 2–3 minutes per side.
- Transfer rolls to baking sheet and bake 20–25 minutes until internal temperature reaches 165°F (74°C).
- Remove toothpicks, drizzle with olive oil, garnish with parsley, and serve warm.
Notes
Chicken can be prepped ahead and stored in the refrigerator until ready to sear and bake.
