Method
- Cut salmon fillet into 1-inch cubes and pat dry.
 - Set up breading stations: flour with salt/pepper, beaten eggs, panko.
 - Dredge salmon cubes in flour, dip in eggs, coat with panko.
 - Heat oil in skillet over medium-high heat.
 - Fry salmon bites 2-3 minutes per side until golden and cooked through. Drain on paper towels.
 - Whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice.
 - Toss salmon bites in bang bang sauce or drizzle sauce on top.
 - Garnish with chopped green onions or cilantro and serve immediately.

Adjust sauce spiciness to taste. Best served immediately to retain crispiness.
