Ingredients
  

Salmon Bites
  • 1 lb salmon fillet skin removed, cut into cubes
  • 0.5 cup all-purpose flour
  • 0.5 cup cornstarch
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 2 large eggs beaten
  • 1 cup panko breadcrumbs
  • 2 tbsp vegetable oil for frying
Bang Bang Sauce
  • 0.25 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1-2 tsp sriracha adjust to taste
  • 1 tsp lime juice

Equipment

  • Skillet
  • Mixing bowls
  • Whisk or fork
  • Paper towels

Method
 

  1. Cut salmon fillet into 1-inch cubes and pat dry.
  2. Set up breading stations: flour with salt/pepper, beaten eggs, panko.
  3. Dredge salmon cubes in flour, dip in eggs, coat with panko.
  4. Heat oil in skillet over medium-high heat.
  5. Fry salmon bites 2-3 minutes per side until golden and cooked through. Drain on paper towels.
  6. Whisk together mayonnaise, sweet chili sauce, sriracha, and lime juice.
  7. Toss salmon bites in bang bang sauce or drizzle sauce on top.
  8. Garnish with chopped green onions or cilantro and serve immediately.

Notes

Adjust sauce spiciness to taste. Best served immediately to retain crispiness.
