  • 2.75 cups all-purpose flour
  • 2 tbsp ground ginger
  • 1.5 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 2 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp fine sea salt
Wet Ingredients
  • 0.5 cup packed dark brown sugar
  • 0.75 cup molasses unsulphured
  • 2 large eggs room temperature
  • 1.75 cups whole milk or buttermilk
  • 6 tbsp unsalted butter melted
  • 1 tsp vanilla extract optional

  • 0.5 cup crystallized ginger finely chopped, optional

Method
 

  1. Preheat waffle iron to medium-high and lightly grease if needed.
  2. Whisk together flour, ginger, cinnamon, nutmeg, cloves, baking powder, baking soda, and salt in a large bowl.
  3. In another bowl, whisk eggs and brown sugar until slightly fluffy. Add molasses, milk, melted butter, and vanilla; whisk to combine.
  4. Pour wet ingredients into dry ingredients and stir until just combined; fold in crystallized ginger if using.
  5. Let batter rest 10–15 minutes for better texture.
  6. Ladle appropriate amount of batter onto the preheated waffle iron and cook until deep golden and crisp, usually 4–6 minutes for Belgian waffles.
  7. Transfer waffles to a wire rack; keep warm in a low oven if making ahead.
  8. Serve with butter and maple-molasses syrup, or top with spiced whipped cream and poached pears.

Notes

For extra ginger intensity, increase ground ginger or add a touch of crystallized ginger. Store cooked waffles in airtight container and reheat in oven or toaster for best texture.
