Method
- Prepare a baking sheet with parchment paper dusted lightly with sugar.
- Combine sugar, corn syrup, and water in a saucepan over medium heat.
- Cook without stirring until mixture reaches 300°F (150°C).
- Remove from heat and carefully stir in lemon juice and zest.
- Drop spoonfuls onto prepared surface and let cool completely.
- Coat lightly with powdered sugar once hardened.
Notes
For extra tang, add a pinch of citric acid. Store in an airtight container away from humidity.
