Method
- Whisk together flour, Parmesan, salt, and rosemary in a bowl.
- Cut cold butter into the mixture until it resembles coarse crumbs.
- Add cold water gradually until a dough forms.
- Form a disc, wrap, and chill for 20 minutes.
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment.
- Roll dough thin to 1/8 inch and cut into shapes.
- Prick crackers with a fork and top with flaky salt.
- Bake 10–13 minutes until lightly golden.
- Cool completely before serving.
Notes
For ultra-crisp crackers, roll the dough even thinner. Store in an airtight container for up to 5 days.
