Ingredients
  

Dough
  • 1.5 cups warm water
  • 2.25 tsp active dry yeast
  • 1 tbsp brown sugar
  • 4.5 cups bread flour
  • 2 tsp fine salt
  • 3 tbsp unsalted butter melted
Pretzel Bath
  • 8 cups water
  • 0.5 cup baking soda
Topping
  • coarse salt
  • melted butter for brushing

Equipment

  • Large mixing bowl
  • Saucepan
  • Parchment paper
  • Baking sheet

Method
 

  1. Combine water, yeast, and sugar. Let activate.
  2. Mix in butter, flour, and salt. Knead until smooth.
  3. Rise 1 hour.
  4. Shape loaf.
  5. Boil in baking soda bath.
  6. Score, salt, and bake until deeply golden.

Notes

For even richer flavor, chill shaped dough overnight before boiling.
