Ingredients
  

Sushi Rice
  • 2 cups sushi rice
  • 2.5 cups water
  • 3 tbsp rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt
Shrimp Tempura
  • 12 large shrimp peeled, deveined, tails on
  • 0.5 cup all-purpose flour
  • 0.25 cup cornstarch
  • 1 egg cold
  • 0.75 cup ice-cold water
  • 0.5 tsp salt
Assembly
  • 4 nori sheets
  • 1 cucumber julienned
  • 1 avocado sliced

Equipment

  • Rice cooker
  • Deep pot or fryer
  • Bamboo sushi mat
  • Sharp knife

Method
 

  1. Cook sushi rice and season with vinegar mixture. Cool to room temperature.
  2. Heat oil to 350°F (175°C). Prepare shrimp by patting dry.
  3. Mix tempura batter lightly using ice-cold ingredients.
  4. Dip shrimp into batter and fry until crisp and pale golden.
  5. Place nori on sushi mat and spread rice evenly.
  6. Add shrimp, cucumber, and avocado, then roll tightly.
  7. Slice roll with a damp knife and serve immediately.

Notes

Serve immediately for best texture. Customize with spicy mayo or eel sauce.
