Ingredients
  

Sponge Cake
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 0.25 tsp salt
  • 3 eggs room temperature
  • 0.75 cup granulated sugar
  • 1 tsp vanilla extract
  • 0.25 cup milk
  • 2 tbsp unsalted butter melted
Cream Filling
  • 0.5 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2-3 tbsp heavy cream

Equipment

  • Mixing bowls
  • Electric mixer
  • Twinkie pan or small molds
  • Piping bag

Method
 

  1. Preheat oven to 350°F (175°C) and grease molds.
  2. Whisk dry ingredients together and set aside.
  3. Beat eggs and sugar until thick and pale.
  4. Fold in vanilla, milk, butter, then dry ingredients.
  5. Fill molds and bake until lightly golden.
  6. Cool completely before filling.
  7. Beat filling ingredients until fluffy.
  8. Pipe filling into cakes and serve.

Notes

Store refrigerated for up to 3 days. Best enjoyed fresh.
