Method
- Preheat oven to 375°F (190°C) and grease a mini muffin pan.
- Whisk together cornmeal, flour, baking powder, salt, and pepper.
- In another bowl, combine milk, eggs, and melted butter.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Fold in shredded cheese and herbs.
- Spoon batter into mini muffin cups, filling about ¾ full.
- Bake 15–18 minutes until tops are golden and a toothpick comes out clean.
- Brush warm poppers with melted butter mixed with honey.
- Cool slightly before removing from the pan.
- Serve warm or at room temperature.
Notes
Add cooked bacon, jalapeños, or sun-dried tomatoes for extra flavor if desired.
