Ingredients
  

Cornbread Base
  • 1 cup yellow cornmeal
  • 0.75 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 cup milk
  • 2 eggs large
  • 0.25 cup unsalted butter melted
Cheese & Herbs
  • 1 cup shredded cheddar cheese
  • 2 tbsp chopped fresh chives or parsley
  • 1 tsp dried thyme optional
Honey Butter Glaze
  • 2 tbsp unsalted butter melted
  • 1 tbsp honey

Method
 

  1. Preheat oven to 375°F (190°C) and grease a mini muffin pan.
  2. Whisk together cornmeal, flour, baking powder, salt, and pepper.
  3. In another bowl, combine milk, eggs, and melted butter.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Fold in shredded cheese and herbs.
  6. Spoon batter into mini muffin cups, filling about ¾ full.
  7. Bake 15–18 minutes until tops are golden and a toothpick comes out clean.
  8. Brush warm poppers with melted butter mixed with honey.
  9. Cool slightly before removing from the pan.
  10. Serve warm or at room temperature.

Notes

Add cooked bacon, jalapeños, or sun-dried tomatoes for extra flavor if desired.
