Ingredients
  

  • 4 smoked sausage links sliced into rounds
  • 2 large sweet potatoes peeled and cubed
  • 3 cloves garlic minced
  • 3 tbsp honey
  • 2 tbsp olive oil
  • 1 tbsp soy sauce
  • ½ tsp smoked paprika
  • ½ tsp salt adjust to taste
  • ¼ tsp black pepper
  • fresh parsley chopped for garnish

  • Mixing bowl
  • Knife and cutting board

Method
 

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Whisk together honey, olive oil, soy sauce, garlic, paprika, salt, and pepper to make glaze.
  3. Place sweet potatoes on baking sheet, drizzle with half glaze, toss to coat, and roast for 15 minutes.
  4. Add sausage slices, drizzle with remaining glaze, and toss gently.
  5. Bake another 20–25 minutes until sweet potatoes are tender and sausage caramelized.
  6. Garnish with parsley and serve warm.

Notes

Add extra veggies for more variety. Leftovers can be refrigerated up to 3 days.
