Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Whisk together honey, olive oil, soy sauce, garlic, paprika, salt, and pepper to make glaze.
- Place sweet potatoes on baking sheet, drizzle with half glaze, toss to coat, and roast for 15 minutes.
- Add sausage slices, drizzle with remaining glaze, and toss gently.
- Bake another 20–25 minutes until sweet potatoes are tender and sausage caramelized.
- Garnish with parsley and serve warm.
Notes
Add extra veggies for more variety. Leftovers can be refrigerated up to 3 days.
