Ingredients
  

Chicken & Marinade
  • 1 lb chicken breast boneless, skinless
  • 2 tbsp honey
  • 2 tbsp lime juice fresh
  • 1 tsp olive oil
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Rice & Toppings
  • 2 cups cooked white or brown rice
  • 1 ripe avocado sliced
  • 1 cup mixed greens or arugula
  • 2 tbsp cilantro chopped, optional
  • 1 tsp lime zest optional, garnish

Method
 

  1. Mix honey, lime juice, olive oil, salt, and pepper in a bowl. Marinate chicken for 10 minutes.
  2. Heat a skillet over medium heat. Cook chicken 5–6 minutes per side until fully cooked and glazed.
  3. Let chicken rest 5 minutes, then slice thinly.
  4. Place a layer of rice on each serving plate.
  5. Add a layer of mixed greens and sliced avocado over the rice.
  6. Top with sliced honey-lime chicken.
  7. Garnish with chopped cilantro and lime zest, serve immediately.

Notes

For extra flavor, drizzle a little more honey-lime sauce over the stack. Use brown rice for a healthier alternative or quinoa for a protein boost.
