Ingredients
  

Chicken
  • 2 large chicken breasts cut into bite-sized pieces
  • 2 tbsp olive oil
  • 3 tbsp honey
  • Juice of 2 limes
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • salt and pepper to taste
Bowls & Toppings
  • 2 cups cooked rice white, brown, or jasmine
  • 1 cup corn kernels fresh, canned, or frozen
  • 1 cup black beans drained and rinsed
  • 1 avocado diced
  • 0.25 cup fresh cilantro chopped
  • lime wedges for serving

Method
 

  1. Prepare chicken marinade with olive oil, honey, lime juice, garlic, chili powder, salt, and pepper; marinate 15–20 minutes.
  2. Cook chicken in a skillet over medium heat 6–8 minutes until cooked through.
  3. Heat rice, corn, and black beans while chicken cooks.
  4. Assemble bowls with rice, chicken, corn, black beans, and avocado.
  5. Garnish with cilantro and serve with lime wedges.
  6. Optional: add Greek yogurt or hot sauce.

Notes

Store chicken and veggies separately for meal prep. Serve fresh for best flavor.
