- Candy the walnuts by combining sugar and water in a small saucepan over medium heat. Add walnuts and cook 2–3 minutes. Let cool.
- In a bowl, mix mayonnaise, honey, and sweetened condensed milk until smooth. Set aside.
- Pat shrimp dry. Dip each shrimp into egg white, then coat with cornstarch.
- Heat vegetable oil to 350°F in a deep skillet. Fry shrimp in batches until golden and crispy, 2–3 minutes per side. Drain on paper towels.
- Toss fried shrimp with honey sauce until evenly coated.
- Sprinkle candied walnuts over the shrimp and serve immediately.
- Optional garnish: chopped green onions for color and flavor.
Notes
Do not overcrowd the pan when frying shrimp. Candied walnuts can be prepared ahead of time. Serve immediately for best texture.
