Ingredients
  

Shrimp
  • 1 lb large shrimp peeled and deveined
  • 1/2 cup walnuts
  • 1/2 cup sugar
  • 1/4 cup water
  • 1/2 cup mayonnaise
  • 2 tbsp honey
  • 2 tbsp sweetened condensed milk
  • 1 egg white lightly beaten
  • 1/2 cup cornstarch
  • vegetable oil for frying
  • Pinch salt

  • Deep skillet or pan
  • Tongs or slotted spoon
  • Small saucepan

Method
 

  1. Candy the walnuts by combining sugar and water in a small saucepan over medium heat. Add walnuts and cook 2–3 minutes. Let cool.
  2. In a bowl, mix mayonnaise, honey, and sweetened condensed milk until smooth. Set aside.
  3. Pat shrimp dry. Dip each shrimp into egg white, then coat with cornstarch.
  4. Heat vegetable oil to 350°F in a deep skillet. Fry shrimp in batches until golden and crispy, 2–3 minutes per side. Drain on paper towels.
  5. Toss fried shrimp with honey sauce until evenly coated.
  6. Sprinkle candied walnuts over the shrimp and serve immediately.
  7. Optional garnish: chopped green onions for color and flavor.

Notes

Do not overcrowd the pan when frying shrimp. Candied walnuts can be prepared ahead of time. Serve immediately for best texture.
