Method
- Preheat oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease.
- Cut a pocket into each chicken breast without slicing all the way through.
- Stuff each pocket with a slice of brie and 2 tablespoons of cranberry sauce. Secure with toothpicks if needed.
- Brush chicken with olive oil and season with salt, pepper, garlic powder, and onion powder.
- Bake for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
- Let rest 5 minutes before slicing.
- Garnish with fresh thyme and cranberries. Serve immediately.
Notes
Prepare stuffed chicken ahead of time and refrigerate until ready to bake. Toothpicks help prevent cheese from leaking.
