Ingredients
  

Chicken Stuffing
  • 4 boneless skinless chicken breasts
  • 4 oz brie cheese sliced
  • 1/2 cup cranberry sauce homemade or canned
  • 1 tsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking dish with parchment paper or lightly grease.
  2. Cut a pocket into each chicken breast without slicing all the way through.
  3. Stuff each pocket with a slice of brie and 2 tablespoons of cranberry sauce. Secure with toothpicks if needed.
  4. Brush chicken with olive oil and season with salt, pepper, garlic powder, and onion powder.
  5. Bake for 25–30 minutes, or until internal temperature reaches 165°F (74°C).
  6. Let rest 5 minutes before slicing.
  7. Garnish with fresh thyme and cranberries. Serve immediately.

Notes

Prepare stuffed chicken ahead of time and refrigerate until ready to bake. Toothpicks help prevent cheese from leaking.
