Irresistible Chicken Cordon Bleu Meatloaf

Ingredients
  

For the Meatloaf
  • 2 lbs ground chicken preferably dark meat
  • 1 cup breadcrumbs
  • 2 eggs large
  • 1 onion finely chopped
  • 2 cloves garlic minced
  • 0.5 tsp dried thyme
  • 0.5 tsp dried basil
  • 0.5 tsp paprika
  • salt and pepper to taste
  • 1 tsp Dijon mustard
  • 0.25 cup milk
For the Filling
  • 6–8 slices ham thin slices
  • 6–8 slices Swiss cheese
For the Topping
  • 0.25 cup Dijon mustard
  • 0.25 cup mayonnaise or Greek yogurt
  • 0.5 cup shredded Swiss cheese

Method
 

  1. Preheat oven to 375°F (190°C) and grease a loaf pan.
  2. Combine ground chicken, breadcrumbs, eggs, onion, garlic, thyme, basil, paprika, salt, pepper, Dijon, and milk in a large bowl.
  3. Place half of meat mixture in the loaf pan and press evenly.
  4. Layer ham slices over the meat, then layer Swiss cheese on top.
  5. Cover with remaining meat mixture and press to seal edges.
  6. Mix topping ingredients, spread over the loaf, and sprinkle shredded Swiss cheese.
  7. Cover with foil and bake 35 minutes, remove foil, bake 15–20 more minutes until golden and 165°F internal temp.
  8. Rest 10 minutes, slice, garnish with parsley, and serve.

Notes

Use dark meat ground chicken for extra juiciness. Make ahead and refrigerate before baking for convenience. Leftovers freeze well.
