Ingredients
  

Pork Meatballs
  • 1 lb ground pork
  • 1 egg
  • 1 cup panko breadcrumbs
  • 3 cloves garlic minced
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 0.33 cup Parmesan grated
  • 1 tsp paprika
  • 1 tsp onion powder
  • 0.5 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil for searing
Sweet Potato Mash
  • 3 large sweet potatoes peeled and cubed
  • 4 tbsp butter
  • 0.25 cup heavy cream
  • 0.5 tsp salt
  • 0.25 tsp cinnamon optional
Bourbon-Maple Sauce
  • 0.33 cup maple syrup
  • 0.25 cup bourbon
  • 2 tbsp soy sauce
  • 1 tsp Dijon mustard
  • 1 clove garlic minced
  • 2 tbsp butter
  • 1 pinch red pepper flakes

Method
 

  1. Mix ground pork, breadcrumbs, egg, garlic, Dijon, Worcestershire, Parmesan, paprika, thyme, salt, and pepper.
  2. Shape into 1.5-inch meatballs.
  3. Sear meatballs in olive oil until browned on all sides.
  4. Boil sweet potatoes until soft, then mash with butter, cream, salt, and optional cinnamon.
  5. Simmer bourbon in skillet for 1 minute, then add maple syrup, soy sauce, Dijon, garlic, and pepper flakes.
  6. Thicken sauce 4–6 minutes, whisk in butter.
  7. Return meatballs to pan and glaze with sauce.
  8. Serve meatballs over sweet potato mash and drizzle with extra sauce.

Notes

For extra depth, finish the meatballs with a touch of smoked paprika or fresh herbs.
