  • 6 cups chopped romaine lettuce
  • 1/2 cup cherry tomatoes sliced
  • 1/2 cup red bell pepper diced
  • 1/2 cup green bell pepper diced
  • 1/2 cup red onion diced
  • 1/2 cup cucumber diced
  • 1/2 cup black olives sliced
  • 1/4 cup banana peppers sliced
  • 1/2 cup provolone cheese diced
  • 1/2 cup salami diced
  • 1/2 cup ham diced
Dressing Ingredients
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • 1 clove garlic minced
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Method
 

  1. Wash and chop romaine lettuce; place in a large salad bowl.
  2. Dice salami, ham, provolone, cherry tomatoes, bell peppers, red onion, and cucumber into bite-sized pieces.
  3. Slice olives and banana peppers; add all ingredients to the bowl and toss lightly.
  4. In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, honey, garlic, Italian seasoning, salt, and pepper.
  5. Pour dressing over salad and toss gently until evenly coated.
  6. Garnish with fresh parsley or basil if desired.
  7. Serve immediately or store dressing separately for later use.
