Ingredients
  

  • 4 chicken breasts boneless, skinless
  • 2-3 jalapeños thinly sliced
  • 1 cup shredded cheddar cheese
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 lime juiced
  • 2 tbsp cilantro chopped, optional

Method
 

  1. Preheat oven to 400°F (200°C) and grease baking dish.
  2. Mix olive oil, garlic, smoked paprika, salt, and pepper; brush over chicken.
  3. Place chicken in baking dish and squeeze lime juice over the top.
  4. Layer jalapeño slices evenly over chicken breasts.
  5. Sprinkle shredded cheddar cheese on top.
  6. Bake 25–30 minutes until chicken reaches 165°F (74°C) and cheese is bubbly.
  7. Let rest 5 minutes, garnish with cilantro, and serve.

Notes

Remove jalapeño seeds for milder heat; pound chicken for even cooking.
