Ingredients
  

Corn Nuggets
  • 1.5 cups corn kernels fresh or thawed frozen
  • 2 jalapeños finely chopped
  • 0.5 cup all-purpose flour
  • 0.5 cup cornmeal
  • 1 tsp baking powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 tsp smoked paprika optional
  • 2 eggs large
  • 0.5 cup shredded cheddar cheese
  • 0.25 cup milk
  • 2 tbsp melted butter or oil

Method
 

  1. Preheat oven to 400°F (200°C) for baking, or heat ¼ inch vegetable oil in a skillet for frying.
  2. In a bowl, combine flour, cornmeal, baking powder, salt, black pepper, and smoked paprika.
  3. Whisk together eggs, milk, and melted butter in another bowl.
  4. Add wet ingredients to dry ingredients and fold in corn, jalapeños, and cheese.
  5. Drop tablespoon-sized portions onto prepared baking sheet or skillet. Flatten slightly.
  6. Bake 15–20 minutes until golden, flipping halfway, or fry 2–3 minutes per side until crispy.
  7. Serve immediately with dipping sauce of choice.

Notes

Optional variations include bacon bits, herbs, or stuffed cheese centers.
