Ingredients
  

Pancake Batter
  • 1 cup sweet rice flour (mochiko)
  • 0.5 cup all-purpose flour
  • 1.5 tsp baking powder
  • 0.25 tsp baking soda
  • 0.25 tsp salt
  • 3 tbsp sugar
  • 1 cup milk
  • 1 egg large
  • 2 tbsp unsalted butter melted
  • 1 tsp vanilla extract
Decoration
  • melted chocolate for drawing whiskers, eyes, nose
  • whipped cream optional for cheeks/whiskers
  • strawberries or bananas sliced for ears

Method
 

  1. Whisk together dry ingredients: sweet rice flour, all-purpose flour, baking powder, baking soda, salt, and sugar.
  2. In another bowl, mix milk, egg, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients until smooth but not overmixed.
  4. Heat non-stick skillet, lightly grease, and pour 1/4 cup batter per pancake.
  5. Cook until bubbles form and edges look set, flip, and cook until golden.
  6. Arrange pancakes with fruit ears, draw kitty face with melted chocolate.
  7. Add whipped cream whiskers or cheeks, drizzle syrup, and serve warm.

Notes

For extra fun, create different kitty expressions with chocolate. Add matcha powder for green pancakes or cocoa powder for chocolate kitties.
