Lasagna Roll-Ups

Classic lasagna flavors in easy-to-serve roll-ups, filled with ricotta and topped with marinara and melted cheese.

Ingredients
  

  • 12 lasagna noodles cooked al dente
  • 2 cups ricotta cheese
  • 1 egg large
  • 1.5 cups shredded mozzarella cheese divided
  • 0.5 cup grated Parmesan cheese
  • 2 cups marinara sauce homemade or store-bought
  • 2 tsp Italian seasoning
  • 2 cloves garlic minced
  • salt and pepper to taste
  • fresh basil for garnish

Equipment

  • 9x13 baking dish
  • Mixing bowl
  • Foil

Method
 

  1. Preheat oven to 375°F (190°C) and grease baking dish.
  2. Cook lasagna noodles until al dente, drain, and lay flat.
  3. Mix ricotta, egg, 1 cup mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
  4. Spread ricotta mixture over each noodle.
  5. Roll noodles and place seam-side down in baking dish.
  6. Top with marinara sauce and remaining mozzarella.
  7. Cover with foil and bake 20 minutes, then uncover and bake 10 minutes more.
  8. Garnish with fresh basil and serve.

Notes

Assemble ahead and refrigerate up to 24 hours or freeze before baking. Great for meal prep and potlucks.
