Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.25 tsp salt
  • 0.75 cup butter softened
Filling
  • 1 cup granulated sugar
  • 3 eggs large
  • 0.5 cup lime juice fresh
  • 1 tbsp lime zest
  • 2 tbsp flour
  • 0.5 tsp baking powder

Method
 

  1. Prepare and bake shortbread crust.
  2. Mix lime filling ingredients until smooth.
  3. Pour filling over crust and bake until set.
