  • 2 sandwich buns or ciabatta rolls
  • 2 cups cooked chicken shredded or diced
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup jalapeños sliced
  • 1/2 cup diced tomatoes
  • 1/2 cup guacamole
  • 1/4 cup sour cream
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Method
 

  1. Toss shredded chicken with olive oil, smoked paprika, garlic powder, salt, and pepper. Heat in a skillet over medium heat until warmed and slightly crispy.
  2. Slice sandwich buns and toast lightly in oven or skillet until golden brown.
  3. Sprinkle shredded cheddar cheese on the bottom bun.
  4. Layer seasoned chicken over the cheese.
  5. Top with jalapeños, diced tomatoes, and optional extras like pickled onions or avocado slices.
  6. Spread guacamole on the top bun and drizzle with sour cream.
  7. Place the top bun over the loaded layers, pressing gently to hold everything together.
  8. Optional: Place assembled sandwich in the oven at 350°F (175°C) for 5 minutes to melt the cheese slightly.
  9. Slice in half and serve immediately with tortilla chips or extra guacamole.

Notes

For added crunch, sprinkle crushed tortilla chips inside the sandwich. Use ciabatta or sturdy buns to hold all the fillings.
