Ingredients
  

Filling
  • 1.5 lb lobster meat cooked and chopped
  • 3 tbsp unsalted butter
  • 1 shallot diced
  • 1 carrot diced
  • 1 celery stalk diced
  • 2 cloves garlic minced
  • 2 tbsp all-purpose flour
Sauce
  • 1 cup seafood stock
  • 0.5 cup heavy cream
  • 1 tsp Dijon mustard
Topping
  • 1 sheet puff pastry
  • 1 egg beaten

Method
 

  1. Sauté vegetables in butter until softened.
  2. Add flour and cook briefly.
  3. Whisk in stock and cream, simmer until thick.
  4. Fold in lobster meat.
  5. Transfer to baking dish and top with pastry.
  6. Brush with egg wash and bake until golden.

Notes

Use freshly cooked lobster for best flavor and texture.
