Ingredients
  

Marinade
  • 16 oz mushrooms whole button or cremini
  • 3 tbsp olive oil
  • 2 tbsp soy sauce
  • 1 tbsp balsamic vinegar
  • 2 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp crushed red pepper flakes optional
Grilling & Serving
  • 8 skewers wooden or metal
  • fresh parsley or thyme for garnish
  • lemon wedges for serving

Method
 

  1. Soak wooden skewers in water for 30 minutes if using.
  2. Whisk together olive oil, soy sauce, balsamic vinegar, garlic, oregano, salt, pepper, and red pepper flakes.
  3. Toss mushrooms in marinade, let sit 10 minutes.
  4. Thread mushrooms onto skewers.
  5. Grill skewers 10–12 minutes, turning occasionally, until tender and slightly charred.
  6. Garnish with parsley or thyme and serve with lemon wedges.
