Method
- Soak wooden skewers in water for 30 minutes if using.
- Whisk together olive oil, soy sauce, balsamic vinegar, garlic, oregano, salt, pepper, and red pepper flakes.
- Toss mushrooms in marinade, let sit 10 minutes.
- Thread mushrooms onto skewers.
- Grill skewers 10–12 minutes, turning occasionally, until tender and slightly charred.
- Garnish with parsley or thyme and serve with lemon wedges.
