Ingredients
  

Egg Muffins
  • 8 eggs
  • 2 tbsp olive oil
  • 1 cup cherry tomatoes halved
  • 1 cup spinach chopped
  • 0.25 cup red onion diced
  • 1 tsp garlic minced
  • 0.5 cup feta cheese crumbled
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Preheat oven to 375°F (190°C) and grease muffin tin.
  2. Sauté onion and garlic in olive oil.
  3. Add spinach and cook until wilted.
  4. Whisk eggs with salt and pepper.
  5. Fold vegetables, tomatoes, and feta into eggs.
  6. Divide mixture into muffin cups.
  7. Bake 18–22 minutes until set.
  8. Cool slightly before serving.

Notes

Add olives or herbs for extra Mediterranean flavor.
