Ingredients
  

Chicken Marinade
  • 1.5 lbs chicken breasts sliced into strips
  • 3 tbsp olive oil
  • 3 cloves garlic minced
  • 2 tbsp lemon juice fresh
  • 1 tbsp red wine vinegar
  • 2 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 0.5 tsp ground coriander
  • 0.5 tsp black pepper
  • 1 tsp sea salt
Tzatziki Sauce
  • 1 cup Greek yogurt
  • 0.5 cucumber grated and drained
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 1 tbsp fresh dill chopped
  • 1 tbsp lemon juice
  • salt and pepper to taste
Assembly
  • 4-6 pita breads warmed
  • 1 tomato diced
  • 0.5 red onion thinly sliced
  • 0.5 cucumber sliced
  • parsley or dill for garnish
  • feta cheese optional

Method
 

  1. Whisk together olive oil, garlic, lemon juice, vinegar, oregano, paprika, cumin, coriander, salt, and pepper. Coat chicken and marinate 30 minutes to 6 hours.
  2. Mix Greek yogurt, cucumber, olive oil, garlic, dill, lemon juice, salt, and pepper for tzatziki. Chill until serving.
  3. Cook chicken strips on grill pan or skillet until golden and fully cooked, about 4–5 minutes per side.
  4. Warm pita breads until soft and pliable.
  5. Assemble gyros with chicken, tomato, cucumber, onion, feta, and tzatziki. Garnish with parsley or dill.

Notes

For best results, marinate chicken overnight. Use whole wheat pita for extra fiber or lettuce wraps for low-carb option.
