Sweet Potatoes
  • 4 sweet potatoes
  • 1 tbsp olive oil
Filling
  • 1 cup chickpeas drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.25 cup feta cheese crumbled

Method
 

  1. Roast sweet potatoes at 400°F until tender.
  2. Mix Mediterranean filling ingredients.
  3. Prepare lemon tahini sauce.
  4. Slice potatoes and stuff with filling.

For vegan option, omit feta or use plant-based alternative.
