Ingredients
  

  • 1 sheet puff pastry thawed
  • 2 cups mixed mushrooms sliced
  • 2 shallots shallots thinly sliced
  • 4 oz herbed goat cheese
  • 1 tbsp olive oil
  • 1 clove garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tsp fresh thyme

Method
 

  1. Preheat oven to 400°F (200°C). Line a baking sheet.
  2. Roll puff pastry and cut into squares or circles.
  3. Sauté shallots in olive oil until caramelized.
  4. Add mushrooms and garlic; cook until tender.
  5. Spread goat cheese on puff pastry and top with mushroom mixture.
  6. Bake 15–20 minutes until golden and crisp.
  7. Garnish with parsley or microgreens and serve warm.

Notes

Assemble just before baking for maximum flakiness.
