Ingredients
  

Pork & Marinade
  • 3 lb pork loin
  • 1 cup Coca-Cola
  • 0.25 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Dijon mustard
  • 2 cloves garlic minced
  • 1 tsp onion powder
  • 0.5 tsp smoked paprika
  • salt and pepper to taste
Optional Garnish
  • fresh parsley
  • sliced green onions

Method
 

  1. Preheat oven to 350°F (175°C) and grease baking dish.
  2. Pat pork loin dry and rub with salt, pepper, onion powder, and smoked paprika.
  3. Whisk together Coca-Cola, ketchup, brown sugar, mustard, and garlic.
  4. Place pork in baking dish and pour half the glaze over top. Cover with foil and bake 45 minutes.
  5. Remove foil, pour remaining glaze over pork, and bake 20–25 minutes uncovered until internal temperature reaches 145°F.
  6. Let pork rest 10 minutes, then slice and garnish with parsley or green onions.

Notes

Simmer leftover glaze to thicken for serving, if desired.
