One-Pot Taco Skillet

A cheesy, hearty one-pot taco skillet with beef, beans, corn, tomatoes, and bold Mexican spices. Perfect for family taco night or quick weeknight dinners.

Ingredients
  

  • 1 lb ground beef or turkey
  • 1 tbsp olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 red bell pepper diced
  • 1 packet taco seasoning or 2 tbsp homemade
  • 15 oz black beans drained and rinsed
  • 15 oz corn drained
  • 14 oz diced tomatoes fire-roasted preferred
  • 1 cup cooked rice optional
  • 1 cup shredded cheddar or Mexican blend cheese
  • salt and black pepper to taste
  • fresh cilantro for garnish

Equipment

  • Large skillet
  • Wooden spoon
  • Cheese grater

Method
 

  1. Heat olive oil in a skillet. Brown ground beef and drain excess fat.
  2. Stir in onion, garlic, and bell pepper. Sauté until softened.
  3. Sprinkle taco seasoning over mixture and stir well.
  4. Add beans, corn, and tomatoes. Simmer for 5–7 minutes.
  5. Mix in rice if using.
  6. Sprinkle cheese over skillet, cover, and let melt.
  7. Garnish with cilantro and serve hot.

Notes

Serve with tortillas, over rice, or with chips for dipping. Great for meal prep too.
