Method
- Preheat oven to 425°F (220°C) and line a sheet pan with parchment paper.
- Toss potatoes with olive oil, half the salt, half the pepper, and smoked paprika.
- Spread potatoes cut-side down and roast for 20 minutes.
- Season steaks with remaining salt and pepper.
- Mix parmesan, butter, garlic, and Italian seasoning.
- Add steaks to pan and press parmesan mixture onto each steak.
- Roast 12–15 minutes until desired doneness.
- Broil 1–2 minutes for a golden crust, rest 5 minutes, then serve.
Notes
Broil carefully to avoid burning the parmesan crust.
