- Combine warm water, sugar, and yeast. Let sit 5–10 minutes until foamy.
- Mix flour and salt in a large bowl. Add yeast mixture and olive oil. Stir until a sticky dough forms.
- Knead dough on floured surface 8–10 minutes until smooth and elastic.
- Place dough in oiled bowl, cover, and let rise 1–1.5 hours until doubled in size.
- Mix minced garlic with parmesan and optional herbs.
- Punch down dough and shape into loaf. Brush with olive oil and sprinkle garlic-parmesan mixture.
- Let shaped loaf rise 30–40 minutes until slightly puffy.
- Bake at 425°F (220°C) 25–30 minutes until golden brown. Cool slightly on wire rack before slicing.
Notes
Steam in the oven helps create a crisp crust. Slice while slightly warm for best texture.
