Ingredients
  

Fries
  • 3 medium zucchini
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup breadcrumbs panko works best
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tsp dried Italian herbs optional
  • cooking spray or olive oil for baking

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash zucchini and cut into fry-shaped sticks. Pat dry to remove moisture.
  3. Prepare coatings: mix flour with salt/pepper, beat eggs, and combine breadcrumbs with Parmesan, garlic powder, and herbs.
  4. Dredge zucchini in flour, dip in eggs, then coat with breadcrumb-Parmesan mixture.
  5. Place coated fries on baking sheet in a single layer. Spray lightly with cooking spray.
  6. Bake 15–20 minutes, flipping halfway, until golden and crispy.
  7. Serve hot with marinara, ranch, or garlic aioli.

Notes

For extra flavor, sprinkle more Parmesan on top before baking. Best enjoyed fresh for maximum crispiness.
