Method
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash zucchini and cut into fry-shaped sticks. Pat dry to remove moisture.
- Prepare coatings: mix flour with salt/pepper, beat eggs, and combine breadcrumbs with Parmesan, garlic powder, and herbs.
- Dredge zucchini in flour, dip in eggs, then coat with breadcrumb-Parmesan mixture.
- Place coated fries on baking sheet in a single layer. Spray lightly with cooking spray.
- Bake 15–20 minutes, flipping halfway, until golden and crispy.
- Serve hot with marinara, ranch, or garlic aioli.
Notes
For extra flavor, sprinkle more Parmesan on top before baking. Best enjoyed fresh for maximum crispiness.
