Peach Bruschetta with Whipped Ricotta

Ingredients
  

Bruschetta Base
  • 1 French baguette sliced into 1/2-inch rounds
  • 2 tbsp olive oil
Whipped Ricotta
  • 1 cup ricotta cheese
  • 2 tbsp heavy cream or milk
  • 1 tsp lemon zest
Toppings
  • 3-4 ripe peaches thinly sliced
  • 2 tbsp honey plus extra for drizzling
  • fresh basil or mint leaves for garnish
  • 1 pinch sea salt

Equipment

  • Baking sheet
  • Hand mixer or whisk
  • Knife and cutting board

Method
 

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on baking sheet, brush with olive oil.
  2. Toast for 8–10 minutes until golden. Remove and cool slightly.
  3. Whip ricotta with cream and lemon zest until light and fluffy. Season with a pinch of sea salt.
  4. Spread ricotta mixture onto toasted baguette slices.
  5. Top with peach slices and drizzle with honey.
  6. Garnish with fresh basil or mint. Serve immediately.

Notes

Best served fresh. If prepping ahead, keep whipped ricotta and toasted bread separate, and assemble just before serving.
