Method
- Preheat oven to 375°F (190°C). Arrange baguette slices on baking sheet, brush with olive oil.
 - Toast for 8–10 minutes until golden. Remove and cool slightly.
 - Whip ricotta with cream and lemon zest until light and fluffy. Season with a pinch of sea salt.
 - Spread ricotta mixture onto toasted baguette slices.
 - Top with peach slices and drizzle with honey.
 - Garnish with fresh basil or mint. Serve immediately.
 
Notes
Best served fresh. If prepping ahead, keep whipped ricotta and toasted bread separate, and assemble just before serving.
