- Peel, pit, and chop the peach. Place in a blender or food processor.
- Add honey, Dijon mustard, and balsamic vinegar. Blend until smooth.
- While blending, slowly stream in olive oil until fully incorporated.
- Season with salt and pepper to taste. Add optional spices if desired.
- Taste and adjust sweetness or acidity as needed.
- Serve immediately or store in a glass jar in the refrigerator up to 5 days.
Notes
Shake or stir before using if stored. Excellent for salads, roasted veggies, or grilled meats.
