Ingredients
  

Dressing Ingredients
  • 1 ripe peach peeled, pitted, chopped
  • 2 tbsp honey
  • 1 tbsp Dijon mustard
  • 2 tbsp balsamic vinegar
  • 1/3 cup extra-virgin olive oil
  • salt and pepper to taste
  • optional spice pinch of cayenne or smoked paprika

Equipment

  • Blender or food processor
  • Measuring cups and spoons
  • Glass jar or bottle for storage

Method
 

  1. Peel, pit, and chop the peach. Place in a blender or food processor.
  2. Add honey, Dijon mustard, and balsamic vinegar. Blend until smooth.
  3. While blending, slowly stream in olive oil until fully incorporated.
  4. Season with salt and pepper to taste. Add optional spices if desired.
  5. Taste and adjust sweetness or acidity as needed.
  6. Serve immediately or store in a glass jar in the refrigerator up to 5 days.

Notes

Shake or stir before using if stored. Excellent for salads, roasted veggies, or grilled meats.
