Ingredients
  

Cookie Dough
  • 2.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 0.5 tsp peppermint extract
  • red gel food coloring as needed

Method
 

  1. Cream butter and sugar until light and fluffy.
  2. Add egg, vanilla, and peppermint extract; mix until smooth.
  3. Whisk together flour, baking powder, and salt; add to wet mixture.
  4. Divide dough in half; tint one half red with food coloring.
  5. Roll each dough into equal rectangles and stack; roll into a log.
  6. Chill dough for at least 2 hours.
  7. Preheat oven to 350°F (175°C). Slice chilled dough into rounds.
  8. Bake 10–12 minutes until edges are just set.
  9. Cool on racks and serve or store airtight.

Notes

Dough can be frozen up to 3 months. Roll edges in crushed candy cane for extra flair.
