Ingredients
  

  • 1 lb boneless skinless chicken
  • 1 cup fresh pineapple chunks
  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 0.5 tsp smoked paprika
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 8 tortillas corn or flour
  • 0.5 cup red onion thinly sliced
  • 0.25 cup cilantro leaves
  • 1 avocado sliced
  • 0.5 cup pineapple salsa

Equipment

  • Grill or grill pan
  • Mixing bowls
  • Knife
  • Cutting board

Method
 

  1. Marinate chicken with olive oil, lime juice, garlic, and spices.
  2. Preheat grill or grill pan over medium heat and oil lightly.
  3. Grill chicken 5–6 minutes per side until cooked through.
  4. Grill pineapple chunks until charred.
  5. Prepare citrus pineapple salsa in a bowl.
  6. Warm tortillas on the grill.
  7. Assemble tacos with chicken, pineapple, salsa, avocado, and cilantro.
  8. Serve with lime wedges and enjoy.

Notes

Best served fresh with warm tortillas.
