Ingredients
  

Salad
  • 2 lbs baby potatoes halved
  • 0.75 cup feta cheese crumbled
  • 0.25 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 2 cloves garlic minced
  • 0.33 cup parsley chopped
  • 2 tbsp dill chopped

Method
 

  1. Boil potatoes until fork-tender and drain well.
  2. Whisk olive oil, lemon juice, zest, garlic, salt, and pepper.
  3. Toss warm potatoes with dressing.
  4. Fold in feta and fresh herbs.
  5. Adjust seasoning and serve.

Notes

Can be made ahead and refrigerated up to 3 days. Flavor improves over time.
