- Heat sesame oil in skillet over medium-high heat. Cook potstickers 3–4 minutes per side until golden brown.
- Cook noodles according to package instructions, drain, and set aside.
- In a bowl, combine cabbage, carrots, scallions, soy sauce, rice vinegar, garlic, and grated ginger. Toss to coat.
- Divide noodles into serving bowls and top with crispy potstickers.
- Spoon slaw over potstickers and noodles. Sprinkle sesame seeds and drizzle sriracha if desired.
- Serve immediately while potstickers are warm and crispy.
Notes
Toast sesame seeds for added flavor. Store noodles and slaw separately from potstickers for best texture.
