Method
- Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish or line with parchment paper.
- Combine graham cracker crumbs, melted butter, and sugar. Mix until evenly combined.
- Press the mixture firmly into the bottom of the prepared baking dish and bake for 8–10 minutes until lightly golden. Cool completely.
- Beat cream cheese and sugar until smooth. Add pumpkin puree, vanilla, and pumpkin pie spice, and mix until creamy.
- Spread pumpkin layer evenly over cooled crust.
- Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
- Spread whipped cream over pumpkin layer. Optionally sprinkle with cinnamon or crushed graham crackers.
- Refrigerate at least 3 hours or overnight before serving.
Notes
Pumpkin Lush is best when chilled overnight for layered effect. Optional toppings add texture and flavor.
