Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 0.5 cup unsalted butter melted
  • 0.25 cup granulated sugar
Pumpkin Layer
  • 15 oz pumpkin puree 1 can
  • 8 oz cream cheese softened
  • 0.75 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
Whipped Cream Layer
  • 2 cups heavy whipping cream
  • 0.25 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x13-inch baking dish or line with parchment paper.
  2. Combine graham cracker crumbs, melted butter, and sugar. Mix until evenly combined.
  3. Press the mixture firmly into the bottom of the prepared baking dish and bake for 8–10 minutes until lightly golden. Cool completely.
  4. Beat cream cheese and sugar until smooth. Add pumpkin puree, vanilla, and pumpkin pie spice, and mix until creamy.
  5. Spread pumpkin layer evenly over cooled crust.
  6. Whip heavy cream with powdered sugar and vanilla until stiff peaks form.
  7. Spread whipped cream over pumpkin layer. Optionally sprinkle with cinnamon or crushed graham crackers.
  8. Refrigerate at least 3 hours or overnight before serving.

Notes

Pumpkin Lush is best when chilled overnight for layered effect. Optional toppings add texture and flavor.
