Ingredients
  

Pumpkin Syrup
  • 1 cup water
  • 1 cup granulated sugar
  • 0.5 cup brown sugar
  • 0.25 cup pumpkin purée
  • 1.5 tsp cinnamon
  • 0.5 tsp nutmeg
  • 0.25 tsp ginger
  • 0.125 tsp cloves
  • 1 tsp vanilla extract
  • salt pinch

Method
 

  1. Whisk water and sugars in a saucepan over medium heat until dissolved.
  2. Add pumpkin purée and whisk until smooth.
  3. Add cinnamon, nutmeg, ginger, cloves, and a pinch of salt.
  4. Reduce heat and simmer for 8–10 minutes.
  5. Remove from heat and stir in vanilla extract.
  6. Strain for a smooth consistency, if desired.
  7. Cool completely and store in a jar for up to 14 days.

Notes

For a thicker syrup, simmer longer. For iced drinks, always strain the syrup to avoid settling.
