Pumpkin Cookies
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp baking powder
  • 0.5 tsp salt
  • 1 tbsp pumpkin pie spice
  • 0.5 tsp cinnamon
  • 0.5 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 0.75 cup pumpkin purée
  • 1 tsp vanilla extract
Espresso Mascarpone Icing
  • 4 oz mascarpone cheese
  • 2 tbsp unsalted butter
  • 1 cup powdered sugar
  • 1 tsp instant espresso powder dissolved in water
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F and prepare tray.
  2. Whisk together dry ingredients.
  3. Cream butter and sugars until fluffy.
  4. Add egg, pumpkin, and vanilla.
  5. Mix in dry ingredients until dough forms.
  6. Scoop and bake 10–12 minutes.
  7. Cool completely before icing.
  8. Beat icing ingredients and spread on cookies.
  9. Dust with cocoa powder to finish.
