Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 2 eggs large
  • 1.25 cups milk
  • 2 tbsp melted butter plus extra for cooking
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Optional Fillings
  • cheese, vegetables, meat, or herbs as desired

  • Whisk
  • Non-stick skillet or crepe pan
  • Spatula

Method
 

  1. Whisk together flour and eggs in a bowl. Gradually add milk while whisking. Stir in melted butter, salt, and pepper. Let batter rest 10–15 minutes.
  2. Heat non-stick skillet over medium heat and lightly brush with butter.
  3. Pour 1/4 cup batter into pan, swirl to coat. Cook 1–2 minutes until edges lift, flip, and cook 1 more minute.
  4. Transfer crepe to plate and repeat with remaining batter.
  5. Add desired savory filling to the center of each crepe. Fold or roll as preferred.
  6. Serve immediately with optional garnish or sauce.

Notes

Cooked crepes can be stacked with parchment paper and frozen for up to a month for easy meals later.
