Method
- Whisk together flour and eggs in a bowl. Gradually add milk while whisking. Stir in melted butter, salt, and pepper. Let batter rest 10–15 minutes.
- Heat non-stick skillet over medium heat and lightly brush with butter.
- Pour 1/4 cup batter into pan, swirl to coat. Cook 1–2 minutes until edges lift, flip, and cook 1 more minute.
- Transfer crepe to plate and repeat with remaining batter.
- Add desired savory filling to the center of each crepe. Fold or roll as preferred.
- Serve immediately with optional garnish or sauce.
Notes
Cooked crepes can be stacked with parchment paper and frozen for up to a month for easy meals later.
