Ingredients
  

Soup Base
  • 2 tbsp butter or oil
  • 1 onion finely chopped
  • 4 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 tsp chili flakes adjust to taste
  • 1 tbsp chili paste
  • 1 tsp smoked paprika
  • 1 tsp soy sauce
  • 1 tbsp miso paste optional
Protein & Broth
  • 2 cups cooked shredded chicken
  • 4 cups chicken broth
  • 1 cup milk or half-and-half
  • 0.5 cup heavy cream
Noodles & Vegetables
  • 2 packs ramen noodles discard seasoning
  • 1 cup mushrooms sliced
  • 1 cup baby spinach
  • 1 carrot julienned
  • 2 green onions sliced

Equipment

Method
 

  1. Heat butter or oil in a large pot over medium heat.
  2. Cook onion until soft, then add garlic, ginger, and chili flakes.
  3. Stir in chili paste, paprika, soy sauce, and miso paste.
  4. Pour in chicken broth and bring to a gentle simmer.
  5. Add mushrooms and carrot, cooking until slightly tender.
  6. Add shredded chicken and heat through.
  7. Stir in milk and cream, mixing until broth becomes smooth.
  8. Add ramen noodles and cook until tender.
  9. Add spinach at the end and finish with sesame oil and lime juice before serving.

Notes

Adjust spice level to taste and serve immediately for best noodle texture. Add soft boiled egg or chili oil for extra richness.
