Ingredients
  

Ricotta Filling
  • 1 cup ricotta cheese well-drained
  • 2 tbsp honey
  • 1 tsp vanilla extract optional
  • 1 tsp lemon zest optional
Coating & Garnish
  • 0.5 cup pistachios finely chopped
  • extra honey for drizzling

Method
 

  1. Strain ricotta if watery for 10–15 minutes.
  2. Mix ricotta with honey, vanilla, and lemon zest until smooth.
  3. Form ricotta mixture into bite-sized balls using spoon or cookie scoop.
  4. Roll each ball in finely chopped pistachios until coated.
  5. Chill bites for at least 30 minutes.
  6. Drizzle with extra honey before serving.
  7. Serve immediately or store in refrigerator for up to 2 days.

Notes

Chill to firm up the bites. Customize with citrus zest or chocolate drizzle for extra flavor.
