Chicken
  • 6 bone-in chicken thighs skin-on
  • 3 tbsp olive oil
  • 4 cloves garlic minced
  • 1 lemon zested and juiced
  • 2 tsp dried oregano
  • 1 tsp smoked paprika
  • 1.5 lbs baby potatoes halved

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Mix olive oil, garlic, lemon, and spices.
  3. Coat chicken thighs with marinade.
  4. Season potatoes and arrange on baking sheet.
  5. Place chicken skin-side up over potatoes.
  6. Roast for 40–45 minutes until golden.

Notes
