Sweet Potato Rounds
  • 3 large sweet potatoes washed and peeled
  • 2 tbsp olive oil or avocado oil
  • 1 tsp sea salt
  • 0.5 tsp black pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp smoked paprika optional for flavor

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Slice peeled sweet potatoes into 1/2-inch thick even rounds.
  3. Place rounds into a mixing bowl and drizzle with olive oil.
  4. Season with salt, pepper, garlic powder, and smoked paprika. Toss to coat evenly.
  5. Arrange sweet potato slices in a single layer on the baking sheet.
  6. Roast for 22–26 minutes, flipping halfway, until edges are lightly crisp.
  7. Serve warm as a snack or side dish.

Notes

For extra crispiness, avoid overcrowding the baking sheet. If meal prepping, reheat in an oven or air-fryer, not a microwave.
