- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Slice peeled sweet potatoes into 1/2-inch thick even rounds.
- Place rounds into a mixing bowl and drizzle with olive oil.
- Season with salt, pepper, garlic powder, and smoked paprika. Toss to coat evenly.
- Arrange sweet potato slices in a single layer on the baking sheet.
- Roast for 22–26 minutes, flipping halfway, until edges are lightly crisp.
- Serve warm as a snack or side dish.
Notes
For extra crispiness, avoid overcrowding the baking sheet. If meal prepping, reheat in an oven or air-fryer, not a microwave.
